No disrespect but I'm sure you know that the Bolt is NOT a performance vehicle w/a top speed of 93 mph and 0-60 in 6.3 secs. So, the tires really aren't going to do anything for you in this respect.
They may improve the "felt" handling of the car a bit (whether it would actually improve the car's time performance on the track/road is another matter) but I wouldn't trash the OEM tires and replace them for new ones just for that. I'd only consider new tires if/when the OEMs wore out or had to be replaced for some other reason.
In any event, as a car enthusiast who has spent tens of thousands of dollars "upgrading" and tinkering w/his cars over the years, I'd say do whatever makes you feel good/better about your car. If you are convinced putting performance tires on it is a good thing, then go for it!
Just don't think that it will somehow transform the car into something that it is not.
